A nutritious breakfast that the kids will love. Also a recipe that the moms can play around with the veggie options. Add whatever veggies your kid likes.
Ingredients
Broken wheat / nurukku gothambu - 1.5 cups
Big onion - 1 big, finely chopped
Green chilly - 2, slit lengthwise
Ginger - 1 inch piece, finely chopped
Grated coconut - 2 tbsp (optional)
Carrot - 1/2 of a carrot, chopped fine (optional)
Green peas - 1/4 cup, boiled (optional)
Beans - 2, finely chopped (optional)
Curry leaves - 1 sprig
Mustard seeds - 1/2 tsp
Oil - 2 tbsp
Salt - as per taste
Method
Boil the broken wheat with salt in enough water until its cooked.
Drain excess water & set aside.
In a kadai, add the oil. Crackle the mustard seeds once the oil is hot enough.
Add chopped ginger, chilly, curry leaves & onion, saute until the onions are translucent.
Now add the veggies and saute well until they are cooked.
Add the cooked broken wheat along with grated coconut, if using.
Mix well with a spatula until all of them come together and till the mixture becomes slightly dry.
Garnish with coriander leaves & serve warm.
