Ash gourd Dessert

This is a pretty quick recipe minus the grating time (which I am very bad at). Did I tell you, this dessert has such a mild yet exotic flavour that makes you reaching out for more..



Ingredients

Grated ashgourd - about 3 cups
Raw sugar - 1 cup (you can reduce to 3/4 cup if you dont have a strong sweet-tooth)
Cardamom seeds  -1/2 tsp, crush them
Ghee - 2 tbsp

Cashew nuts - 1 tbsp
Raisins - 1/2 tbsp

Method

1. Place grated ash gourd in a wide-mouthed pan (non-stick is best), on low heat. Stir them occasionally so as not burn them.
2. Once moisture has dried up (almost), add sugar and allow sugar to melt. Don't allow to melt too much, as then the dessert might turn hard & crisp.
3. Once it starts to boil, slowly add ghee and mix well till you get a semi-halwa like consistency.
4. In a separate pan, heat some ghee and roast the raisins and cashews. Add this to the dessert.
Switch off the stove when it has a semi-thick consistency. Serve warm.
